GIONG MARKET’S BEAN SPROUTS CAKE
This is a cheap popular street food for young people in TienGiang – “From the day you get married, with whom shall I eat bean sprouts cake?” – Ingredients include rice flour, tapioca starch, pig livers, meat, shrimps, chicken eggs, sprouts, and roasted peanuts. These are called patch cakeproperly because the flour is poured into a mold that looks like a patch. Another name of bean sprouts cake properly comes from the fact that there are a lot of sprouts (of green beans) stuffed inside the cake. Dip the patch into a boiling pan, wait till the cake turn brown then take them out and wait for the oil to dry. The dish is served with vermicelli,raw vegetables, herbs, garlic and chili sauce. Raw vegetables and fragrant herbs are sliced into a bowl, and noodles are layered on top of it. Next, the cake is shredded or chopped, put in the bowl, and chopped garlic sauce is poured on at last. Finally, dinners mix up all elements and enjoy.
