SWEET AND THICK RICE NOODLE

Rice noodle can be bought from any noodle shop or made at home, however, only at home can you be sure of its quality and cleanness. The ingredients is tapioca starch, rice noodle, shaved coconut. The ratio of tapioca starch and rice noodle is 1/1. Without any added water, crush the rice noodle and mix in tapioca starch slowly. Knead until the dough is smooth, then divide into smaller pieces. Cover your hands in flour and roll until you have long and thick rice noodle. To cook, only the noodle, sugar, and coconut milk are needed. Add coconut water into a pot and cook until boiled. Then drop the noodle in but leave the sugar out until the noodle is cooked or the noodle would becomes hard. Using palm sugar would give it more flavor than regular sugar. At the end, use coconut milk for a few minutes. Then serve into a bowl and enjoy.
