SWEET MOLDED CAKES
It is a folk dish which is unforgettable to anyone who has ever tasted it. Choose the best sticky rice, wash it carefully, mixed with chopped pandan juice, and mixed with coconut milk and flour. Enough amount of water is a must. Well stir the dough over high heat for about 15 minutes until it feels heavy. Turn off the heat and keep stirring to get a smooth mixture. Put the dough into molds (aluminum or iron). Oil the molds, put the dough in, and use banana leaves or nylon sheet pressing down to smoothen the cake surface. Cakes are steamed for 20 minutes. Wait until they are cool to cut into small pieces. Palm sugar is cooked to condensed state. Cake pieces are on plate with sesame on top beside is a small bowl of palm sugar syrup. One cannot forget the countryside flavor of greasy coconut milk, fragrant pandan, sesame, sweet sugar and the chewy crispy dough.
