LEAF CAKES
Mơ leaves (P. Foetida) are a kind of vines that grows in the fence or riverbank. It is bitter, sour, cool, heat bar, antiseptic … also used for dysentery, indigestion … The cake cooking method is simple yet meticulous and elaborate at the same time. Choose soft rice, soak it, and grind it into powder. Apricots leaves can be found in the garden; they are washed and pureed for their juice. Next, mix that juice with flour, coconut milk (2-3 times diluted), salt and sugar to form a paste that is not too sticky. Use jackfruit leaves, coconut leaves or water hyacinth leaves to wrap the cakes. Jackfruit leaves are a popular choice. Clean the leaves and put the dough on top along the leave shape, and bring them to steam for 15 minutes. Cook the coconut milk, add some salt and sugar, wait until they dissolve, slower the heat and add in some tapioca starch. Coconut milk must not boil; keep the fire small until the liquid starts to condense. We will get a beautiful shiny look. When the cakes are well cooked, unwrap them from jackfruit leaves, put onto a plate, pour coconut milk on top, add sesame and roasted peanuts. It is interesting and cozy to enjoy such a dish while chatting with friends.
