BEN TRE DUCK MEAT STUFFED GLUTINOUS RICE CAKE
According to the owner of Phu An Khang Resort, Ben Tre province, in his hometown there were not so many food sellers, his grandmother therefore usually made cake for her grandchildren. She grinded glutinous rice flour, and made it into small balls, inside of which is finely chopped duck meat with bones, wood ear mushrooms, and two pepper seeds. They were steamed and served with chili garlic sauce and sliced cucumbers. All the children would scramble around fighting for the dish. The dish has now appeared on the menu as a unique appetizer in his family’s today business. To avoid bone choking for diners, duck meat is no longer grated with bones as it used to be. In addition, red radishes are added in the stuffing to enhance the look and flavor.
