CẦN THƠ’S CASSAVA GUMMY WORMS
Looking at a plate of gummy worms with vibrant and eye-catching colors, when taken a bite, we can taste all the essences of nature within this simple snack. It is made from cassava that is cleaned and soaked in water with a bit of salt overnight. Grind the cassava finely then squeeze to release the liquid and make cassava flour. Mix the flour, cassava, coconut milk, condensed milk, and tapioca starch. Divide the batch into smaller batches so we can color them. Green from pandan, red from beets, purple from magenta leaves, white from coconut water. Mix each batch thoroughly then pour into a pot that is lined with banana leaves so the dough wouldn’t stick to the pot. Steam for about 15 minutes then let it cool and cut it into finger width or two finger width (the larger size would need to be put on a bamboo skewer). Then shave some coconut (steam with salt for 10 minutes to store for longer). Mix the shave coconut and the gummy worms together with some toasted sesame seeds and fine salt on the surface.
