IN CAKE
The cake has a round shape like the moon. Its ingredients are glutinous rice and granulated sugar, and it is most commonly made on the occasion of the full moon in August and Om Bok Festival every year. It is meant to show people’s gratitude to the moon for giving them prosperous harvest. Glutinous rice is roasted, well-done sugar syrup is prepared to soften the cake, uncooked or overcooked syrup otherwise will make them too sticky or fail to have nice texture. Mix the sugar syrup and the dough and knead until the dough is heavy and stick. Mould the dough tightly for better adhesion and takes them out to rest for about 30 minutes to an hour. Then they are ready to be cut. Today, to meet consumer high demand, these cakes come in a variety of stuffing and flavors such as green bean cakes, coconut milk cakes, yellow cakes, white cake and many other beautiful designed patterns. Consumers then have more choices.
