LIVER CAKES
It is quite a famous cake in Southern region. Cake is a round and dark brown. After being baked, it has tiny holes resembling pig livers, which explains it called pig liver cakes. Baking ingredients include rice flour, cocoa powder, duck eggs, cardamom or jelly sugar, coconut milk, aniseed, baking soda and cooking oil. Cook coconut milk on the stove over small fire, added with sugar and cocoa powder. Well stir duck egg with aniseed to eliminate egg smell, and then pour this into the above mixture together with some rice flour and baking soda. Slightly stir not to create lots of bubbles on the surface so that the cake will have a smooth look after baking. Let the mixture rest for 10 minutes. These cakes can be cooked using ovens, cookers or normal frying pans. For oven, molds should be heated 20 minutes prior, and then pour the dough in, set temperature at 180oC for 40-60 minutes depending on each oven. Those who are used to making these cakes can tell whether they are well done judging by their smell. They are taken out, cut into slices, and enjoyed. Everyone would be happy to have a slice of soft smooth cakes with sweet aroma.
