LYING SESAME CAKES
A specialty of the Chinese in Soc Trang. Today, they are sold at supermarkets and some markets all over the country. With only one bite, one can feel the cake’s splendid taste of sweetness and crunchiness. Interestingly, he looks at his bite just to discover that the cake is empty inside with foam like stuffing. The cake crust looks perfect while the inside is just nothing, which is properly why its name is “láo – lying”. Ingredients include glutinous rice, taro, sesame, and sugar. Potatoes are washed, peeled, finely mashed, rolled up in one piece and dried under the Sun for a couple of days. Next it is cut into thin slices, rolled in glutinous rice, and turned into round shape. These balls are dip fried until they expand onto lemon size. They then will be fully coated in sugar syrup and yellow fried sesame.
