PORK SKIN CAKES
Depending on the cake molds, cakes come in different sizes and shapes. The most common type is round with many layers which is eye-catching and delicious. Ingredients include flour, rice flour, green beans, pandan leaves, coconut milk and sugar. Rice flour and tapioca starch is evenly divided into two equal parts; one part will be mixed with green bean, coconut milk, and sugar while the other is mixed with pandan juice and sugar. Prepare a steamer, and then pour a layer of green bean mixture following by that of pandan mixture, and leave to cook for 7 to 10 minutes (depending on the cake size and each layer thickness). Later layers take longer to cook, and the last layer must be pandan mixture to have that beautiful green color cover. Wait for the cake to cool off then serve. It is a combination of sticky layers, fragrant pandan leaves, greasy green bean and coconut milk.
